Frickers Bar (Fitness Freak Snickers;)

I love  food….real food and The current Real Food movement is great …more and more people becoming aware and experimenting with various alternative ingredients.
But when it comes to losing or maintaining weight these  foods are not FREE-FOR-ALLS!!

These are a great family treat(nut allergy warning) and even more but remember a little goes along way.


For all you GAA,Rugby,soccer,runners,cyclists out there they would be excellent mid day snacks or even after tough sessions

Enough of the waffle,lets get stuck in,


For the Crust:
1 Cup of Walnuts
1 Cup of Hazelnuts
1/2 Cup of Dates

For the Caramel:
1 Cup of Dates
4 Tablespoons of Almond Butter
1 Tablespoon of Coconut Oil, Melted
1 Pinch of Course Salt
1/2 Cup of Almonds

For the Top:
200g of Dark Chocolate

Lets Go……..

To start, put all the dates in a bowl and pour boiling water over them and leave them soaking. Dry roast the hazelnuts and walnuts at 220’C for about 2-3 mins (this adds SEIRIOUS flavour so it’s worth it!). Then add the roasted nuts to the food processor and blend until fine.

Pour the nut flour into a bowl and set aside. Add 1/2 cup of the dates and two teaspoons of the water they were soaking in to the food processor and blend until you have a smooth paste.

Then add back in the nut flour and blitz until you get a doughy mixture. You’ll have to scrape down the sides a couple of times to ensure it all mixes in evenly, and keep blending until it all comes together, it will happen suddenly!

Spread out your mixture into a pan lined with parchment paper.

For the caramel, add the remaining dates and 3 teaspoons of their water into the food processor and blend as before. Then add in the coconut oil, almond butter and salt (don’t leave this out!). Blend it until you have a thick, smooth caramel.

Spread this evenly over the crust.

Dry roast the almonds just like the other nuts and then sprinkle them over the caramel.

Melt your chocolate in a bain-marie and then pour it over the almonds.

Pop the whole thing in the freezer for about 30 mins to set.

then cut into bars and enjoy…..sparingly:)
